They always prepare numerous recipes, with lots of unique combination of spices. Gatte vegetable is one of the best recipes of Rajasthan. Rajasthani people also called as Bele. Gatte is made of besan or chickpeas.
Added combination of spices and oil then prepare dough by following Rajasthani Food recipe. That dough boil in water and make onion curry to eat. Then prepare authentic gatte ki sabji, eat with chapati, missi roti, missipuri, plain puri, Kobha roti, laccha paratha, naan, etc. Lots of way of eating gatte, infect people visit restaurant to taste the soft and silky texture of the gatte.
My mother prepares gatte in two ways gatte curry and gatte vegetable. Basically, gatte curry make along the chhachh and gatte vegetable make with the tomato and green chilly. I like tomato vegetable of gatte and my brother like gatte curry without onion. So, when mother prepare, we do the fight against flavor. My mother always keeps in mind for both and prepare duet combination.
She makes 2 times in a week. I
always say make me more I eat not in lunch but also dinner. The taggy flavor of
tomato and spicy flavor of green chilly appreciate the gatte. When put in mouth
soft texture of gatte open all the taste bites. My mother also like the flavor,
she always says please make me on alternative days. I definitely make for her
along the Rajasthani Food recipe.

Gatte recipe
Ingredients
1 cup of
gram flour
1 pinch of
Hing
2 table
spoons of oil (moin)
½ glass of
water
½ table
spoon of meetha soda
Dry
spicy
1 table
spoon of red chilli powder
½ table
spoon of turmeric powder
1 table spoon
of coriander powder
Salt according
to taste
½ table
spoon of rock salt
½ table
spoon of black salt

spicy
1 table
spoon of black pepper
1 table
spoon of aniseeds

for making Dough
Take one
deep plate, add gram flour, all dry and standing ingredients, Hing and meetha
soda. Make one hole in the middle of the flour. Then add oil, mix well until all
the flour look same. Using water make proper dough like roti. After prepare
dough, divide dough into two or three separate balls. Give the shape of these
balls like thick stick using hands.
Note: When prepare dough use water in
small-small amount otherwise dough doesn’t take proper texture.
Preparation
of boiling the dough
Take one pan,
fill half of them. Put in high flame and wait until water boiled. After boiled
the water, put all the sticks and cover with lid. At this time sticks are totally
dissolved in the water. After 10 to 15 minutes of cooking, all the sticks come
over the water. This give the indication of gatte is ready to leave the water.
So, drain it using sieve. After sieve, cut the sticks into number of parts.
At this
stage prepare the Gatte into type
Gatte ki sabji with Chhachh ki Gravy
Ingredients
500 ml of
Chhachh
2 table
spoons of oil
½ table
spoon of mustard seeds
½ table
spoon of cumin seeds
Dry
Spicy
½ table
spoon of turmeric powder
1 table
spoon of chlli powder
1 table
spoon of coriander powder
Salt
according to taste

of masala paste
Take one
bowl, add all dry ingredients and put ¼ glass of water. Mix well and use this
paste in tadkka.

for preparing curry
Take one
pan, add oil, wait for warm. Then add hing, cumin seeds, mustard seeds,
cracking sound here. Add masala paste, wait for leaving oil. Then add all the
chhachh and stir it. Don’t leave to stir otherwise chhachh tear it and gravy
doesn’t take proper texture. When chhachh boiled, put all pieces of Gatte in
the curry. Stir it and wait 10 minutes to cook properly. Now chhachh ke gatte
ready to serve.
Note: Leaving oil means all masala cooked
properly.

Tomato Gatte recipe
Ingredients
3 Chopped tomatoes
2 chopped green
chilly (adjust accordingly)
2 table
spoons of oil
½ table
spoon of cumin seeds
Dry
Spicy
½ table
spoon of turmeric powder
1 table
spoon of chlli powder
1 table
spoon of coriander powder
Salt
according to taste
Preparation for Tomato Gatta
Take one
pan, put in high flame. Add oil and wait for change the temperature. Then put
Hing and cumin seeds. Cracking sound hear, put chopped tomatoes and green
chilli. Stir it and add salt. Then put all the dry species and stir it. Then cover
with lid. Wait for 5 minutes you see all the tomatoes and green chilly are soft.
Then add all the boiled Gatte and mix well. Now Gatte is ready to serve.
