middle of the flour. Now add salt (according to taste), 1 tea spoon of ajwain,
1 tea spoon of Meetha Soda and 2 table spoons of oil. Then mix well until all
the ingredients reaches at every corner. Now with the help of small-small
amount of water, prepare dough. Consistency of dough is thicker like Puri
dough. Otherwise, samosa doesn’t go to crunchy and flaky. Leave for 15 to 20 minutes
for soaking and raising the texture of dough.

and with the help of knife chopped finely.

Take one
wok, add one tea spoon of oil and put in high flame. When temperature goes
change, add hing and mustard seeds. Cracking sound hear, then add coarse black
pepper, coarse clove. Then stir for 1 minute, so all flavors come in the oil.
Then add mashed potatoes and close the flame. Now add salt, red chilli powder,
mango powder, mint powder, black salt, raisin, peanuts and finely chopped cashew.
