Wash 2 to 3 times by using pure water so if any sand or dust in daal remove it. Grind the daal using grinder and make like a batter. Add all dry spicy like red chilli powder, salt according to taste, dry ginger called as sooth, finely grind black pepper, big Cardamom, Hing, some finely chopped coriander leaves and clove. Mix well, so all the masala dissolve into batter. Then make small circle shape of batter using finger or big size sieve spoon. After that put into sunlight and leave for 2 to 3 days. So, all the circle dries it and store in the air tight container.



    3. Is Magordi good for health?

    Yes, because ingredients used for preparing daal which already consist high nutrition. When spicy adds it increase the digestion value and generate flavors.

    When Magordi prepare with Green Moong daal it improves the flexibility of arteries and veins, regulate the blood sugar level and blood pressure and reduce the bad cholesterol.

    When prepare with Moong daal it enhances vitamin A, B, C and E and minerals like iron, calcium and potassium. Magordi is the powerful source of vegetarian protein and also help to reduce the weight.

    Rajasthani Food Recipe of Plain Magordi

    Ingredients

    1 bowl of Magordi

    Dry Spicy

    1 tea spoon of turmeric

    1 table spoon of Red Chilli powder

    1 table spoon of coriander powder

    Salt According to taste

    For Tadkka

    1 spoon of cumin seeds

    1 pinch of Hing

    2 table spoon of vegetable oil



    Preparations

    Preparation for roasted the Magordi

    Take one bowl of Magordi and crushed into small pieces using rolling pin or stone. Then take one pan, add one table spoon of oil and put in high flame. Wait for change the temperature and add crushed Magordi. Now your flame is slow down and stir continuously until the color change into golden brown. Learn from the pan.

    Preparation for preparing spicy for Tadkka

    Take one small bowl add all the dry spicy and drop ½ glass of water. Mix well.

     

    Preparation for preparing Magordi

    Take pan, add oil, wait for change the temperature. Then add Hing and cumin seeds. When cracking sound hear, drop all the spicy mixer into the pan. Wait for leave the oil. After that add two glasses of water, wait for boil. After that add all the roasted Magordi. Cook well until the Magordi mash well. It takes 5 to 6 minutes. After that your vegetable ready to serve.

    Note: When cook Magordi use the lid, it helps to cook fast and less flame used.

    Rajasthani Food recipe of Kachi Magordi

    Ingredients

    1 bowl of Magordi

    Dry Spicy

    1 tea spoon of turmeric

    1 table spoon of red chilli powder

    1 table spoon of coriander powder

    Vegetable

    6 to 7 Cloves of Garlic

    For Tadkka

    2 table spoon of vegetable oil

    1 pinch of Hing

    1 table spoon of Cumin seeds

    2 to 3 glasses of water



    Preparation

    Preparation for Magordi

    Take of 2 to 3 glasses of water in one pan or cooker. Add turmeric and salt. Wait for boil. Then add Magordi in the boil water. Cook it until texture converted into soft or mashed form. It takes 10 minutes to convert the soft texture.

    Preparation for preparing spicy for Tadkka

    Take one small bowl add all the dry spicy and drop ½ glass of water. Mix well.

    Preparation for Tadkka

    Take one pan add oil and open the high flame. Wait for temperature change then add Hing and cumin seeds. Cracking sound hear, add crashed or chopped garlic. Stir 1 minute so flavor come in Tadkka. Add dry spicy mixer and wait for leaving the oil. Now close the flame and whole mixer drop on Prepare Magordi. Mix well. Then open the high flame and wait for 1 to 2 boils, then close the flame.

     

    These two recipes are almost same, only difference is that plain is fully plain there is no combination of veggie but Kachi Magordi open the garlic flavor. It gives proper texture of garlic with combination of spicy.
