    Ingredients 

    Oil for deep frying

    Ingredient for dough

    1 bowl of all-purpose flour

    Salt according to taste

    2 table spoons of oil (for moin)

    1 tea spoon of Meetha soda

    1 tea spoon of ajwain

    Ingredients of stuffing

    4 big size onions

    3 medium size boiled potato

    1 table spoon of oil

    Dry spices

    Plain salt according to taste

    Rock salt according to taste

    1 table spoon of coriander seeds

    1 table spoon of aniseeds

    1 tea spoon of black pepper

    1 tea spoon of red chilli powder

    1 table spoon of mango powder

    1 pinch of hing

    1 tea spoon of gram masala

    Preparations

    Preparation for dough

    Take a deep bowl, add all-purpose flour. Then make the hole at the middle of the flour. Drop Meetha soda, salt, moin or 2 table spoons of oil, ajwain. Then adding small amount of water, make the dough like puri. Mean tight dough. Keep rest for 15 minutes.

    After 15 minutes, make the small bowls like puri.

    Note: Moin make the kachori softer and flakier.

    -        When drop ajwain, put in between thumb and rub then drop. This process crashes the ajwain and remove the issues of gastro.

    -        Used warm water for preparing dough.

    Preparation for stuffing

    Preparation of roasting coriander seeds and aniseeds

    Take the wok, put in low to medium flame. Then add the aniseeds and coriander seeds. Stir it continuously until it goes into golden brown. It takes around 1 minute to roast.

    Leave for 10 minutes, for cool down the temperature.

    After 10 minutes grind in course like texture.

    Preparation of chopping

    Take the onion and peel it. Now start to finely chopped. 

    Stuffing

    Take the wok and add the 1 table spoon of the oil. Put in high flame. Wait for temperature change, then add the 1 pinch of hing and course texture of roasted coriander and aniseeds around 3 table spoon and stir for 2 seconds. Then add the fine chopped onion and mashed potatoes. Then mix well and close the flame. Add other spices such as black pepper, red chilli powder, mango powder, gram masala and salt. Mix well until all the masalas look in same texture. Leave for cool down the masala.

    After that make the balls for all stuffing and put in one plate.

    Note: Size of the balls manage accordingly, because piyaz ki kachori is little bit bigger than daal ki kachori. So, have an option for preparing big balls.

    Preparation of filling the kachori

    Take one ball of dough and make the puri using rolling pins. Then add one ball of stuffing in the middle of the puri.

    Caught all corners of the puri, collect in the middle and twist it.

    This process done by all the balls and make the kachori and put in one plate.

    Preparation of frying

    Take the wok and fill with oil. Then put in high flame. Wait for temperature change, when temperature goes up, drop the filling kachori one by one. Wait for change the color, then turn it on other side. Then again follow same process. When both side color change, leave out from the wok and Piyaz ki kachori ready to serve with chutney, khadi.

    Note: Kachori is fried in low to medium flame. Otherwise, doesn’t get the proper texture.
