Famous dish of Rajasthan - Khoba Roti


Food, which collaborate lots of energy, promote each hour of the day. Hours want more power to complete intellectual task. Nutrition full diet rich in fiber and protein that are called as roti or chapatis. Maintain the digestive system. It fills the tommy and keep satiated for longer periods of time. Basically, promote calcium, magnesium, phosphorous and sodium. 

Regular eating of chapati maintain normal hemoglobin level. In Rajasthan so many types of rotis are prepare which is specialty of Rajasthani like Missi Roti or puri, Khoba roti, Tikkad, etc. Today we discuss the Khoba roti recipe by following Rajasthani Food Recipe. It is enjoyed with daal makhni, paneer atrangi, paneer patiyala, paneer dilruba, paneer butter masala, dhai bhindi, Khadai Paneer, etc.




    1. What is Khoba Roti?

    Khoba roti is a roti prepare from wheat flour and gram flour. Dough prepared from warm water and warm milk. Fermented for 10 minutes which enhance proper bread of wheat flour. At the time of rolling flour bread, put on khoba or cavity in whole roti. This khoba sustain lots of ghee and enhance the flavors. This roti is too healthy, eating with lots of vegetables like Khadi, aloo piyaz ki sabji, daal, laasan ki Chutney, etc. Every age of the people like to eat because texture is too soft to break and also eat. From the ancient times Rajasthani prepare at home for his dearones.

    2. Are any special utensils used for prepare?

    No, there is no special utensil required to made. Simple tawa used to prepare which is made of iron or clay. When prepare on clay tawa it enhances more flavors of Rajasthani Food recipe. Clay tawa spread more flavors of sand when cook on flame. Every step of cooking complete at low flame. Low flame gives proper texture like Rajasthani Mathari and enhance the color of the roti. When start to bite remind crispy crust along the little sound of cracking. Means there is no word to explain, try it yourself and prepare at home.

    3. How many calories 1 Khoba Roti consist?

    1 serving Khoba roti consist 289 calories. Out of which carbohydrate 189 calories, protein 32 calories and rest of the calories consist fat. One roti fulfills 14 percent of daily needs.

    When eat one roti, it fulfills all the daily needs of protein and minerals like fiber, vitamin B1 and B3, magnesium and phosphorous. Now, let’s start talk about recipe ……

    4. Rajasthani Food Recipe of Khoba Roti

    Ingredients

    1 bowl of wheat flour

    1 table spoon of Gram flour

    Salt according to taste

    ¼ glass of warm milk

    ¼ glass od warm water

    2 table spoons of Ghee

    1 table spoon of Ajwain

    Clay iron tawa


    Methods

    Methods for preparing Dough

    Take deep plate, add wheat flour, gram flour, salt, ajwain and mix well. Add 2 table spoon of ghee, and mix it again. Or you can check by taking small amount of atta in your fist, when close fist atta take the shape of the fist.  Means quantity of ghee is sufficient. This is my mother technique which I learn from her and share with all. Then drop small part of warm milk knead the dough and in rest of the part use warm water. Prepare a tight dough like puri ka atta with proper elasticity. Leave 5 to 6 minutes so elasticity take proper shape.



    Note: Dropping ajwain improve the digestive system. Protect from acidity.

     Prepare for rolling the doug

    Make one big ball of whole dough and rolling thick using rolling pin. Because, at the time of making Khoba or cavities on Roti it is not break. When whole roti gets the cavities, it looks like a block painting. Overall meaning that it looks so beautiful. Using your finger or chimta pinch it whole dough roll. Because when cook on tawa, it doesn’t give the flavor of raw.





    Cook on Tawa

    Take a Tawa, put in high flame, when tawa temperature change, slow down the flame. Take rolling roti and put on opposite side where we do pinch. Wait 10 to 15 minutes, color change into golden brown. Using kitchen chimta change the side and bake on slow flame. At the time of bake the roti use chimta for change the position of roti. 15 minute is the minimum time for change the color of roti in one side. Total 30 to 35 minute for proper cooking.

    Note: At the time of bake leave the pan and bake on slow flame.

    Process of serving

    Eating hot is the best way of enjoying every flavor of Roti. After cook, spread lots of ghee over all and eat with your favorite vegetables and chutneys.



    At my home my mother prepares 1 day in a week. And I love to eat, even whole day I enjoy this roti. My mother prepares extra for me because mother love is unconditional.

    I also prepare for my daughter; she like but other family member less. But I prepare for her within 15 days. Little queen coming along kitchen and make pinch. She enjoyed a lot for preparation and said that Mumma I love this art.
