Rajasthani Food recipe Of Leswa Ka Achar

 

Rajasthani village where lack of vegetables and fruits conditions are available. Atmosphere is so hot, going one place to another for buying fruits and vegetables is too typical to manage. Workout on that situation prepare pickles of immature fruits like kair ka Achar, Katte Mitte Nimbu Ka achar, Hari Mirchi Ka achar, leswa Ka achar, etc, which utilize in everyday diet. Leswa is type of a fruit which shape is too small like a Betel (supari). It is green in color along dark green color cap. Inner part is white which is smooth and sweet juice like gum.  People use leswa as fruit but also leaves, bark and stem as a medicine specially in cough and cold. Unani medical science still used as a treatment of many diseases like Asthma, fewer, allergy, etc.  




    1. Why we want to eat the leswa?

    Leswa is not a source of eating Chapati and filling tommy. It is a way of getting nutrition and remove lots of diseases. Let’s See

    It consists mucilaginous pulp, which contain plant sterol which is beneficial to fighting the diseases. By eating small amount of these type of fruits, it enhances the power of the body. Small consumption increases the power of body and help to remove the fatigue.

    2. What are the benefits leswa consist?

    Single name leswa promote so many benefits:

    -        When prepare decoction of the bark, it cleans the fresh wounds which held due to the insect’s bite.

    -        Decoction of the bark also help in the treatment of diarrhea, stress, depression, anxiety. Patients take up to 40 to 50 ml of decoction.

    -        When prepare fresh juice, it gives the treatment of burning sensation of the body and dryness of the body. Suffers patient take 15 to 20 ml in terms of dose.

    -        Paste of leaves remove all the pimples and ulcers facing problems.

    -        Powder of the bark help to joint the bones if break.

    -        At the time of periods girls facing the issue of pain, when drink decoction of the bark help to relief the issues.

    -        Those people who continuously face the dental issues, they get the rid of by gargling the decoction of the bark.

    Leswa bark is too important, it provide so many remedies which normal people facing in daily life.

    Rajasthani Food Recipe of Tail Panni leswa

    Ingredients

    500 grams of leswa

    10 grams of Red Chilli

    Salt According to taste

    3 table spoon of grated mustard seeds

    2 tablespoon of mustard oil

    10 glasses of water



    Preparations

    Preparation to convert leswa into taggy flavor

    Take one basket, drop all the leswa and wash properly using lots of water. After that, take one bucket or clay pot, fill ¼ with water, add 2 table spoons of grated mustard seeds and 2 to 3 table spoons of salt. Mix well using hand or big spoon. Then drop all the leswa, leave for 1 week. In this time period mustard seeds and salt spread the sourness flavors which is absorbed by the leswa. Also, in this time period leswa color convert green into yellowish.

    Note: 1. Remove all the stem and leaf’s if any leswa consist.

    2. Don’t remove the cap otherwise gum and juicy part remove.

    3. In 1 week, leswa doesn’t take taggy flavor wait 2 to 3 days more.

    Preparation for making tail panni leswa

    After one weak, drain the leswa using sieve. All water removes out and wash with pure water. Take one pan and put in high flame, add oil, wait for warm the oil. After, that add all the taggy leswa, salt according to taste and red chilly powder. Mix well. Wait for temperature down. On other side prepare warm water up to 2 glasses. Same for temperature down.

    After temperature down table one big jar, add water and leswa. Mix well. Now your tail panni leswa ready to serve.

    Rajasthani food recipe of Masala leswa

    Ingredients

    500 grams leswa

    Dry spicy

    2 table spoons of red chilli powder

    1 tea spoon of turmeric powder

    Salt according to taste

    1 table spoon of Black Salt

    1 Table spoon Rock Salt

    Standing Spicy

    1 table spoon of grated black pepper

     5 to 7 grated cloves

    2 grated big cardamom

     For Tadkka

    250 grams mustard seeds

    1 table spoon of black cumin seeds

    1 table spoon of fenugreek seeds

    1 table spoon of aniseeds



    Preparations

    All steps of preparation are same until it takes taggy flavor and wash the leswa.

    Preparation for dry out the leswa

     After wash the leswa, put under the sunlight so all the moisture leave.

    Note: Use clean cloth when put under the sun because cloth help to remove the moisture.

    Preparation of Tadkka

    Take one deep pan and put in high flame, add 250 gram of mustard oil and wait for warm. After warm, add aniseeds, fenugreek seeds and black cumin seeds. Cracking sound hear, then add leswa, all standing and dry species. Mix well. Cook 10 minutes on high flame. After 10 minutes, you see the leswa texture converted soft. Close the flame and wait for a cool down. After temperature down, fill the jar and your pickle ready to serve.
