    Rajasthani food recipe of white sauce pasta


    Ingredients

    1 bowl of pasta

    2 bowls of milk

    1 spoon of butter

    1 big spoon of all-purpose flour

    1 spoon of ghee

    1 small table spoon of oil

    Veggie

    1 small capsicum

    1 small tomato

    1 onion

    ¼ cup of corn

    1 small bowl of coriander leaves

    Dry spices

    Salt according to taste

    1 table spoon of black pepper

    1 table spoon of chilli flex

    1 table spoon of oregano

    Note: Ratio of the milk and pasta always consider as 2: 1 means milk take 2 bowl and pasta is 1 bowl otherwise sauce texture doesn’t come.

    -        Veggies easily add and remove according to choose.

    -        If oregano is not had, add the rubbing ajwain or mix herbs.

    Preparations

    Preparation of boiling the pasta



    Take one big container, add the water and put in high flame. Wait for boiling the water, when water goes into boiling stage add the pasta, salt and 1 table spoon of oil. Mix well. Then cover with lid and leave for proper boiling.

     It takes around 15 minutes to get proper texture of pasta. After 15 minutes you get the size of pasta bigger than the original. Or you also check by pressing one of the pastas, if break easily or soften means pasta boiled perfectly.

    Then close the flame and take one sieve drop all the boiled pasta. Then wash with clean water so all the starch leaves from the pasta.

    Preparation of white sauce



    Take one wok, put in high flame. Then add 1 table spoon of ghee, when temperature changes add 1 table spoon of all-purpose flour. Now bubbles held mix well until it goes into light brown color.

    After that add milk and mix well. Stir continuously until milk goes into boiling stage. Then leave to stir.

    Now add the salt, oregano or mix herb or rubbing ajwain, red chilli flax, black pepper, and all finely chopped veggies. Then mix well. Leave for cooking well.

    Within the small time of interval stirring process held when sauce goes into thick. Then add the boiled pasta. And mix well.

    Leave for 2 to 3 minutes so the pasta absorbs the white sauce. Then close the flame and sprinkle coriander leaves.

    Rajasthani food recipe of red sauce of pasta


    Ingredients

    1 bowl of pasta

    1 table spoon of oil

    1 table spoon of butter

    Veggies

    4 medium size tomato

    1 small size finely chopped onion

    4 to 5 cloves of garlic

    1 dry red chilli

    Veggies

    4 medium size tomato

    1 small size finely chopped onion

    4 to 5 cloves of garlic

    1 dry red chilli

    1 small bowl of coriander leaves

    Dry spices

    Salt according to taste

    1 tea spoon of mustard seeds

    1 table spoon of black pepper powder

    Black salt according to taste

    1 table spoon of oregano or mix herbs

    1 tea spoon of sugar

    1 table spoon of tomato sauce

    Note: Boiling of pasta take same process which describe previously.

    Preparations

    Preparation of boiling tomatoes



    Take deep container, fill with water and put in high flame. Wait for coming into boiling stage.

    On other hand, take all the tomatoes wash properly and provide cross split at the top of the tomatoes, due to peeling well.

    Now water is coming into boiling stage, add splitter tomatoes and red chilli. Then cover with lid and leave for boiling properly.

    It takes around 5 to 6 minutes to get soften and help to peel the tomatoes. After 5 to 6 minutes, close the flame and leave the lid.

    Now take cold water and drop the boiled tomatoes and red chilli. Temperature of all these stuff goes down, peel the tomato and drop on grinder. Grind well and make smooth paste.

    Now strain with sieve and make perfect soup like texture.

    Note: Red chilli provide spicy taste and with dark combination of red color.

    -        If think dropping red chilli provide more spiciness leave the seeds before adding into boiling stage.

    Preparations of making red sauce

    Take the wok, put in high flame. Then add, 1 table spoon of ghee and wait for temperature change. Then add mustard seeds, when cracking sound hear drop all finely chopped onion and garlic. Sauté well until onion goes into transparent stage. Now add tomato paste. If the paste is thick add the water in it.

    Give the perfect mix by adding salt, chilli flex, oregano or rub ajwain or mix herb, black pepper, sugar and butter. Leave for cooked well until sauce get thick. It takes around 10 minutes for getting thickness. After getting thickness add 1 table spoon of tomato sauce and mix well.

    Now add, boiled pasta and mix well. Leave for 3 to 4 minutes, so the pasta absorbs the sauce and give saucy flavor.

    After 4 minutes close the flame and sprinkle coriander leaves. Now pasta ready to serve.
