Rajasthani Food Recipe of Set Dosa
Ingredients
4 small bowls of rice
1 small bowl of urad daal
2 cups of poha
1 tea spoon of fenugreek seeds
2 table spoons of salt (salt according to taste)
Oil or ghee for cooking the Dosa
Note: In the
measurement use same type of bowl.

Adjust
salt according to taste.
Preparations
Preparation of soaking these all ingredients
-
Take
one deep bowl, add 4 cups of rice, then wash properly and soak for 4 to 5 hours.

Now
take another deep bowl, add 1 small bowl of urad daal, 2 cups of poha, 1 tea
spoon of fenugreek seeds. Then wash properly and soak for 4 to 5 hours.
Preparation for grinding the ingredients

After
4 to 5 hours, drain all ingredients with the help of sieve differently.

Take
grinder add all the soaked rice and grind finely.

Then
leave out in big bowl.

Again, same process does with other bowl of ingredients
and drop in same bowl of rice.

Mix
well and add 1 or 2 table spoons of salt.

Then
leave for fermentation around 9 to 12 hours or overnight.
Note: Use
deep and big bowl, because when leave for fermentation, amount of the batter raises
and fermented properly.

Salt
is adjusted accordingly.

Fermentation
time adjust according to the weather, if too hot weather means fermented 8
hours. It is sufficient time for fermentation.

When
cold weather, fermented around 12 hours.

Minimum
time of fermentation is 8 hours and maximum time take around 12 hours.
Preparation for Dosa making

Take
tawa and put in low to medium flame.
-
Then
add one lid of oil, spread all over the tawa.

Then
add batter with big spoon or small bowl and spread on tawa in small shape.

Then
add ghee at the upper side of the spread Dosa.
- Cover with lid.

Wait
for 2 to 3 minutes, so set dosa properly cooked.

Now set Dosa is ready to serve.
Note: Thickness
of the Dosa is too thin or take batter accordingly.

Try
to take bowl small so whenever spread, proper alignment of Dosa made.
- Remind that flame is low to medium
Preparation of making plain Dosa
For preparing plain Dosa ratio is 3: 1 means rice quantity is 3 bowl and rest of the ingredient urad daal, poha is one ratio. And 1 tea spoon of fenugreek seeds. All preparation and method are same for preparing Dosa. Dosa is big enough in comparison to set Dosa. So spread big as your size of tawa and don't cover.
Note: For grinding, use the soak water because it packed with full of nutrition.
