That bati is called as Bafla bati. In previous blog preparation of bati is done by the baked process. Varieties of bati recipe we discuss like plain bati, masala bati, aloo bati, mawa bati, etc.
When perform steaming and frying process prepare varieties of bati. All ingredients are same by following Rajasthani Food Recipe but preparation is little different.

1. Is boiling process good for health?
Answer is Yes or No, Let’s understand the concept
Figure is 50 – 50 because boiling process is the greatest loss of nutrients in comparison to other process. All nutrients and vitamin C and B leach out into the water. These are the water-soluble nutrients. When talk about vitamin A, D, E and K are fat – soluble nutrients. When follow other cooking process it preserves the nutrient content of food. Boiling remove all the nutrients but it is fat – free cooking method. Using less water, we preserve all the vitamin and minerals in our food. Due to use of less water, water use only for boiling the substance. As a result, all minerals and nutrients are remained in the food.
2. Is frying process good for health?
Fried foods
are high in fat, calories and salt. Some studies said that fried foods contain some
serious health problems like diabetes2 and heart disease. When fried the food,
it absorbs all the fat of the oil. Expertise says that eating lots of fat laden
food raise the blood pressure and generated high cholesterol along the risk
factor for heart disease. When eat fried food it is a good source of vitamin E
and increased the energy density.
3. Conclusion of both the techniques
There are so many processes of cooking. Eating in a limit is best way
of taking advantage of every food. Overeating of any food contain losses of
energy, increase the weight, lack of nutrients and minerals. So, maintain the
diet in control and take the advantage of lots of foods.
I love to
eat bafla bati, my mother makes me once in a month due to highly rich in protein.
In my family everyone eats specially my father. My father always helps my
mother for making this bati because he like cooking. Prepare so many dishes and
open all the pours of taste. Now a days my daughter like the taste. For her
demand I prepare 2 times in a month. She always says me prepare more, I want to
eat on every meal of the days.
Let’s
start to cook bafla bati using Rajasthani Food recipe. We follow two unique
processes of cooking steaming and frying. Both processes generate new flavors
of bati. This recipe makes the bati more nutrients and energy full. Now start full
recipe of bafla bati.
Recipe of plain bafla bati
Ingredients
2 bowls of wheat
flour
½ table
spoon of Soda or meetha Soda
1 table
spoon of ajawain
Salt
according to taste
2 table
spoons of ghee (moan)
2 glasses
of warm water

for preparing Dough
Take one
deep plate, add flour, soda, ajawain, salt and mix well. Then make hole in the
middle of flour, again mix well. Using warm water make a dough. Remind that use
water in small amount and knead properly. Prepare dough like chapati. So,
elasticity take proper shape and make soft Bati. Leave 15 to 20 minutes.

for preparing dough balls
After 20
minutes, knead properly and make proper dough. Divide the dough into number of
parts and make big balls. All balls prepared at same size.
Note: Big balls because when bati take
final touch up it looks great to serve.
Preparation
of boiling
Take one deep pan, fill with half of water and put in high flame. Then wait for boiling. After boiling put all the balls.
In starting all the balls fulling dissolve in the water.
When all balls boiled properly, it come on the upper part of the water. It gives the indication of all balls are ready to follow the next steps.
Drain all the balls using sieve and cut into four pieces.
Note: Divide into four pieces because when
start next step remove all the raw texture and come in original taste.

of Frying
Take one pan,
add oil for frying, put in high flame and wait for temperature change. Now, put
the pieces in the warm oil. After 6 to 7 minutes, you see the bati color change
into golden brown. Then remove the bati from the oil. This process follows for
all pieces of bati and make the bati like crunchy and crispy. Put ½ table spoon
of ghee in every piece of the bati. It opens all the pours of the bati and enhance
the taste.
Note: It’s our choice to add ghee over
the pieces of the bati. If anyone want to skip, they easy skip it and eat without
ghee.
Same
process follows for masala bati name is called as masala bafla bati. Each steps
represent Rajasthani food recipe, which raise all the flavors.
