    Ingredients of sambhar masala

     1 small bowl of red chilli

    1 small bowl of coriander seeds

    1 small bowl of chana daal

    1/3 bowl of urad daal

    1/3 bowl of cumin seeds

    1/3 bowl of fenugreek seeds

    ½ bowl of curry leaves

    1 table spoon of ghee

    1 tea spoon of Hing

    Note: We take coriander seeds and chana daal in 1:1 ratio.

    -        The add other ingredient 1/3 of coriander seeds and chana daal.

    -        Red chilli gives perfect color along spiciness.

     

    Preparations

    Preparation for roasting all the ingredients

    Take one aluminum wok, put in high flame. When temperature of the wok raises than add 1 table spoon of ghee and low down the flame. Then add 1 small bowl of red chilli and sauté for 1 minute. Then add 1 small bowl of chana daal and coriander seeds. Again, sauté for 1 minute. Then add all remaining ingredients 1/3 part of fenugreek seeds, 1/3 part of cumin seeds, 1/3 part of urad daal. Then stir it for 1 minutes. At last, add the curry leaves and stir it until it leaves the aromatic smell around 5 to 6 minutes. When smell raise close the flame and wait for cool down the temperature.

    Note: Sauté provide all intense flavors in all the ingredients.

    -        All roasting process held on low flame otherwise flavor not raise in perfect form.

    Preparation of grinding

    Now the temperature cools down, transfer all the stuff and grind into flour like texture. Then fill on air tight container.

    Final preparation

     After fill the container, add the 1 tea spoon of hing and mix well. Then cover with cap. Now sambhar masala ready to used.
