Rajasthani Food Recipe of Doodh Daliya and Masala Daliya

 Doodh Daliya one of the famous dishes of Rajasthan. Rajasthani eats from the ancient time and earn lots of nutrition at the morning breakfast. When add doodh and dry fruits, it prepares as rich meal of all dearones. 

All work held in the low flame and experience the smell of tradition. Daliya is one of the ingredients eat in the form of masala daliya, plain daliya called as Khichdi. These are the traditional food coming from years.

    According to the Rajasthani Food recipe of doodh daliya normal ingredients are used. Whole wheat crashed into coarse shape and store for months.     Recipe of doodh daliya

    Ingredients

    1 big bowl of daliya

    1 glass of milk

    ½ bowl of sugar

    2 table spoons of ghee

    ¼ bowl of chopped coconut

    1 big table spoon of raisin

    1 tea spoon of cardamon powder

    Note: Sugar adjust according to taste



    Preparations

    Preparation of roasting the daliya

    Take pressure cooker, add 2 table spoon of ghee and put in high flame. When ghee goes melt slow down the flame and add 1 bowl of daliya. Then start to roast until it goes into golden brown color. This process held in low flame. Around 10 minutes take to complete the process.

    Preparation of final stage

    After roasted add 3 glass of water and mix well. Then cover with lid and take 3 whistles. After whistle wait for open the lid. After lid open, add the milk and stir it. Wait for boiling the milk, when boiled take place add the sugar and mix well. When sugar totally dissolve, then add the dry fruits like dried coconut, raisin and cardamon powder. Now doodh daliya ready to serve.

    Note: Stirring process held continuously otherwise it stick at the bottom of the pan.

    Ingredients of Masala Daliya Recipe

    1 bowl of daliya

    ½ bowl of moong daal (it’s our choice which daal added peel or not peel means green or yellow)

    2 table spoons of ghee

    1 pinch of hing

    1 table spoon of mustard seeds

    Dry ingredients

    1 tea spoon of turmeric powder

    1 table spoon of red chilli powder

    Salt according to taste

    1 tea spoon of black salt

    1 tea spoon of gram masala

    Veggies

    1 small bowl of finely chopped onion

    1 small bowl of finely chopped tomatoes

    1 small bowl of finely chopped cabbage

    1 small bowl of finely chopped cauliflower

    1 small bowl of finely chopped carrot

    1 small bowl of bottle gaurd

    1 small bowl of finely chopped capsicum

    2 table spoon of finely chopped coriander leaves

    1 small bowl of peas

    Note: Veggies are added or removed according to the choice.



    Preparations

    Preparation for soaking the daal

    Take moong dal and wash properly. Then soak for 1 hours. For using remove the water and drop of the pressure cooker.

    Preparation for cook the daliya

    Take pressure cooker, add 3 glasses of water. Then put in high flame and wait for water coming in boiling stage. It takes around 5 minutes. Then add the daliya, soaked dal, salt, turmeric powder, bottle guard, potatoes, cauliflower, cabbage. Mix well. Then cover with lid and take 3 whistles. Then close the flame and wait for opening the pressure cooker.

    Note: In the preparation of daliya ratio of water and daliya held 1:3.

    Preparation for masala Daliya

    After pressure cooker open, take wok, add the ghee and put in high flame. When ghee melt adds the Hing and mustard seeds. Cracking sound hears, add onion sauté well until it goes transparent. Then add peas, carrot, capsicum, salt and all ingredients. Mix well and cover with lid. Cook until all the vegetable goes soft. Then add tomatoes and mix well. Again, cover with lid until it goes into soft. Then add one glass of water and squeeze 1 lemon in this water. Then again mix well and wait for boiling stage. After boiling add boiled daliya and mix well. If texture goes same then close the flame and spread 2 table spoon of coriander leaves. Now masala daliya ready to serve.
