Sambhar and Jeera Rice Recipe in traditional food of Rajasthan Style

 

Ingredients

 

1 Bowl of Arahar dal

 

Vegetable for Sambhar

 1 Brinjal

1 potato

2 Drum stick

¼ part of Pumpkin

¼ part of Bottle Guard

2 Onion

Note: Vegetables are added or removed according to the choice

 

 For sourness

¼ bowl of Tamarind pulp

 

For Tadka

2 spoon of mustard vegetable oil

3 to 4 Curry leaves

1 to 2 dry red Chilli

1 tea spoon of mustard seeds

1 pinch of Hing

 

 Dry Spicy

 2 table spoons of Sāmbhar Masala

1 table spoon of Coriander powder

½ table spoon of turmeric powder

½ table spoon of Red Chili powder

Salt according to taste






 

Methods

 

Method for Soaking Daal

Take one bowl add daal, wash it with proper water and drain it. Now again add water to soak and wait for 1 hour for soaking.

Method for preparing vegetable for sambhar

Chopped all the vegetables in proper size.

Method for preparing Tamarind

In sambhar tamarind pulp need to provide sourness. So, soak it before 4 to 5 hours of Sambhar making. After 4 to 5 hours drain it and separate it all the pulp.

 

Method for cook daal and Vegetable

Take one pressure cooker add all the soak daal, chopped vegetable, ¼ part of salt and ¼ part of turmeric. Cover with the lid and take 3 to 4 whistle of pressure cooker. So, soak daal easy convert the texture like soup and veggie are nor fully dilute.

Note: Not to add onion because we use on Tadka.

Method For Tadka

Take one pan, put on high flame, add vegetable oil and wait for hot. After that add Hing, Mustard seeds, red chilli and Curry leaves, when cracking sound hear, add chopped onion and stir until colour gone to be brown. Then add all the stuff available on pressure cooker and dry spicy. Wait for boil than add tamarind pulp. Wait for 10 minutes to cook well or until the layer of oil are seen at the upper part of the Sambhar. Now your high protein diet is ready to serve.

Jeera rice recipe

Ingredients

1 bowl of rest rice

1 table spoon of cumin seeds

2 table spoons of oil

Salt according to taste

1 pinch of jeera



Preparation

Take one pan and put in high flame. Then add oil and wait for temperature change. Now add cumin seeds and Hing. Cracking sound hears. Then, add rest rice and salt. Mix well and wait for 2 minutes in low flame. Now jeera rice ready to serve.
