    Ingredients

    Ingredients of outer covering

    250 grams of Maida

    Salt according to taste

    1 tea spoon of Meetha soda

    2 table spoons of oil (for moin)

    1 tea spoon of ajwain

    ½ glass of water

    Oil for fry

    Ingredients of stuffing

    4 boiled potatoes

    4 to 5 cashews

    6 to 7 Raisin

    1 table spoon of peel off peanuts

    1 small bowl of finely chopped onion

    1 small bowl of finely chopped coriander leaves

    1 tea spoon of oil

     1 tea spoon of mustard seeds

    Dry spices

    Salt according to taste

    Black salt according to taste

    1 table spoon of red chilli powder

    1 table spoon of mango powder

    1 pinch of Hing or asafetida

    1 tea spoon mint powder

    Standing spices

    1 tea spoon of course black pepper

    1 tea spoon of course clove

    Preparations

    Preparations of Dough



    Take deep bowl, add sieve all purpose flour. Then, by putting hand make hole in the middle of the flour. Now add salt (according to taste), 1 tea spoon of ajwain, 1 tea spoon of Meetha Soda and 2 table spoons of oil. Then mix well until all the ingredients reaches at every corner. Now with the help of small-small amount of water, prepare dough. Consistency of dough is thicker like Puri dough. Otherwise, samosa doesn’t go to crunchy and flaky. Leave for 15 to 20 minutes for soaking and raising the texture of dough.

    Preparation of chopped dry fruits

    Take cashew and with the help of knife chopped finely.

    Preparation of stuffing

    Take one wok, add one tea spoon of oil and put in high flame. When temperature goes change, add hing and mustard seeds. Cracking sound hear, then add coarse black pepper, coarse clove. Then stir for 1 minute, so all flavors come in the oil. Then add mashed potatoes and close the flame. Now add salt, red chilli powder, mango powder, mint powder, black salt, raisin, peanuts and finely chopped cashew. Mix well until the consistency goes proper.

    Preparation of filling the samosa

    -        Take dough and make small-small balls like Puri. Using rolling pin roll the ball in the circular shape.

    -        Then in the middle of the circular shape cut into two equal parts like semicircle.




    -        Then take one part, add water on the start line of dough layer using fingertip.

    -        Now joint both the layer like corn of mehndi.

    -        Put the stuffing on the open part of corn using spoon.



    -        Again, at the corners put water on the finger and joint open corner, which help to make the triangular shape.

    -        This process used for making all the samosa.

     Note: Keep remind that circular shape side corner is thin in comparison to middle part.

    -        Don’t fill over otherwise samosa break it.

    -        Apply water using tip of the finger, don’t apply more otherwise get wet.

    Preparation of frying the samosa



    Take wok, add oil and put in high flame. Wait for temperature change, when oil leave the heat put all the samosa and low down the flame. Fry until the temperature color goes into dark brown. Then leave from the oil. Now samosa is ready to serve.
