    Amazing Vegan Dish Recipe of Moong daal Kachori

     

    Ingredients

     

    1 cup of Maida

    ½ bowl of urad Daal

    ½ bowl of Moong Daal

    1 pinch of Meetha Soda

    2 small spoons of Ghee

    1 pinch of Hing

    Oil for deep fry

    1 tea spoon of oil

     

    Dry species

    Salt according to taste

    1 table spoon of red chilli powder

    1 tea spoon of black salt

    1 tea spoon of rock salt

     

     

    Standing species

    1 tea spoon of black pepper powder

    1 tea spoon of clove powder

    1 tea spoon of aniseeds

    1 table spoon of coriander seeds

     

    Preparations


    Preparation for making dough

    Take one deep bowl, add Maida. Then make one hole in the middle and add 2 big spoons of ghee, Meetha soda and salt. Mix well until ghee, Meetha Soda and salt cover to every corner. Now with the help of water prepare thick dough like Puri. Then put 10 minutes for rest.

     

    Note: Add salt according to taste.

    -        Meetha Soda is used for proving fluffiness in the Maida.

    -        Ghee adds for softness.

    Tip: When prepare Kasta Kachori, use less ghee means half of the moong daal Kahori.

    Preparation for making filling

     

    -        Take urad and moong daal and soak for 2 to 3 hours by combining both daals.

    -        After 2 to 3 hours, drain the water using sieve.

    -        Then, take wok and put in high flame. Then add 1 tea spoon of oil.

    -        Wait for temperature change, then add 1 table spoon of aniseeds and Hing.

    -        Now drop all the drain daal and start to roast by following stirring process.

    -        It takes 5 to 6 minutes and color goes into golden brown.

    -        Then close the flame and add spices like salt, black pepper powder, red chilli powder, coriander seeds, clove powder. Mix well.

     

        Note: Stirring continuously otherwise daal get burn.

    -        Daal is roasted in low flame otherwise flavor doesn’t raise.

       Tips: In kasta Kachori same filling used but less amount.

          Preparation for making kachori



    -         Take dough and make balls bigger than puri. Then roll with rolling pins using dry flour. Rolling of is little bigger than puri.

    -        Then take the puri in the hands and add the filling. Now take all the corners and make the ball like structure.

    -        This corner act as middle part of the kachori and flat them.

    -        This step follows for all balls.

    Tips: For Kasta kachori, make small ball and prepare small size kachori in comparison to normal kachori.

    Preparation for deep fry

    Take wok, add oil for fry and put in high flame. Then wait for temperature change, when oil goes too hot, slow the flame and fry all the kachori. It takes around 10 minutes. When kachori color goes into golden brown, leave from the oil. Now kachori is ready to serve.

    Note: Prepare kachori in low flame, otherwise kachori doesn’t get proper texture.
