Ingredients
For Dough
2 bowls of Maida
1 bowl of cold water
1 pinch of salt
Note: Refrigerator water used
For Stuffing
½ grated cabbage
1 grated carrot
½ grated capsicum
2 grated onions
1 fine chopped green chilli
1 spoon of ginger paste
1 spoon of garlic paste
small cube of butter
Dry Spicy
1Tables spoon of black pepper
1 table spoon of salt
½ table spoon of sugar
Preparations
Preparation for making Dough
Take deep vessel, add Maida and salt. Mix well, add water in small parts and make soft dough. Elasticity of the dough is smooth, try to remove the crackers. Then put in refrigerator for 10 to 15 minutes.
Preparation for making Stuffing
Take one deep bowl add all chopped and grated veggies, put salt, sugar and black pepper. Mix well. Now at this stage all the veggie leaves the water at the bottom of the bowl. Then add butter cube in the stuffing and mix well. Butter gives proper texture to stuffing. After mixing of butter, take stuffing to another bowl and leave it water at the bottom. So, at the time of making Momo’s shapes are not disturbed.
Preparation for making Momo’s
Take out Dough from the refrigerator and make small balls of same size. Spread dry flour on the balls and make small puri, with the help of rolling pins. At one time make 9 to 10 puri’s. Take one puri, stuff one spoon of stuffing, then give shape like semicircle. One corner of the semicircle pastes to each other. Then at the middle make plates like saree. After completing plates small hole made at the end, that hole paste to both side walls. Using this process prepare all the Momo.
Note: Puri corners are thin in comparison to middle.
Final step for preparation of Momo’s or steaming Momo’s
At the time of preparation of Momo’s, put steamer on high flame. When
water is boiled, grease the plate with oil then put prepare Momo’s and cover
with lid. Cook for 20 minutes, after 20 minutes see the color of the Momo’s
changed. Little bit transparency generated on the out layer. Now your Momo’s
ready to serve with Chutneys like coriander, mint, coconut, tomato, garlic, etc.
