    Ingredients

    2 Potato

    Vegetable required for curry

    3 to 4 chopped cloves of Garlic

     1 chopped onion

    2 tomatoes pulp

    Dry Spicy

    ½ table spoon of turmeric powder

    1 table spoon of Chilli powder

    1 table spoon of coriander powder

    Salt according to taste

    1 table spoon of Kasturi Meethi

    For Tadkka        

    4 or 3 table spoon of vegetable oil

    ½ table spoon of cumin seeds

    1 pinch of Hing

    For garnishing

    Small amount of coriander leaves

    Preparation

    Preparation for fried potatoes

    Take two potatoes, peel it and chopped into little big in size. Then wash properly and strain. Take one pan, add 2 table spoon of vegetable oil and open high flame. When temperature of oil increases added all strain potatoes. Stir it and cover one lid. So, potato fried and cook on stem. After 1 minute open the lid and stir. Again, cover it, within 5 minutes your potato completely cooked well. Remove all cooked potato from the oil.

    Note: You can also check by mashing one potato on two fingers.

    Preparing For Tadkka

    Take potato cook pan, if oil is remaining use, it by adding one more spoon of oil. Wait for oil temperature increase, then add Hing and cumin seeds. When cracking sound hear, add chopped onion and garlic. Continue stir until onion texture come in transparent. Then add pulp of tomato and salt. Again, start stir, when little oil seen on upper layer all the dry spices. Stir properly and left for 4 to 5 minutes, all oil is coming on upper side of the side. Then add all fried and cooked potato. Stir it and leave on flame for 2 minutes. So, all Curry flavors soaked by the potatoes and provide proper texture. Last step for Tadkka is spread Kasturi meethi all over the curry and mix well. Wait for 1 minutes on flame then close it.



    For Garnishing

    After completing all the steps of Rajasthan Food Recipe last step of garnishing remaining. So spread all the chopped coriander leaves. And your potato curry ready to serve.
