Rajasthani food recipe - Chapati Khichdi along Mint Chutney

 

2 Chapati (break chapati into bites form)

1 small bowl of mix dal

For mix daal

¼ bowl of chana daal

¼ bowl of Arahar daal

½ bowl of moong Daal

Veggie for Khichdi

1 chopped onion

1 chopped tomato

1 small chopped potato

½ chopped carrot

½ small bowl of peas

1 chopped green chilli

1 lemon

For Dry Spicy

½ tea spoon of turmeric

1 tea spoon of red chilli powder

½ tea spoon of black pepper

Salt according to taste

For Tadkka

1 pinch of Hing

1 table spoon of mustard seeds

2 table spoon of vegetable oil

For Garnishing

Small amount of coriander leaves



 

Methods

Method to prepare daal for khichdi

Take one bowl, add measure daal in bowl, wash it and soak for 1 hour. After 1 hour put in pressure cooker and take 3 whistles. Then close the flame.

Method for preparing Tadkka

Take one pan, put in high flame, add oil, wait for warm. After that add Hing and mustard seeds, cracking sound hear. Then add onion, salt and potato, mix well and cover with lid. Then wait until potato is cooked properly. After that add carrot, peas and chilli, stir continuously 2 minutes. Then add chopped tomato, spicy and mix well. Then cover with lid until tomato turned into soft.

Method for making Khichdi

Now In Tadkka pan, add boil daal and 1 glass of water. Mix well and wait for 2 minutes for boiling. Then add bites of chapati, mix well and put in high flame so consistency of the whole stuff converted into thick. Then close the flame, spread coriander leaves and ready to serve with chutneys like mint, tomato, garlic, coriander, coconut, etc.


Recipe of Mint Chutney

Ingredients

50 grams of mint

2 to 3 green chillies or dried red chilli (adjust accordingly)

½ peel Raw mango or 1 to 2 table spoon of lemon juice

1 pinch of Hing

1 table spoon cumin seeds

3 to 4 cloves of garlic

Salt according to taste

½ small bowl of peanuts seeds

3 to 4 leaves of curry leaves

3 to 4 leaves of coriander leaves



Preparation

Preparation for washing the mint

Take one deep bowl, add the mint and wash mint properly. This proper repeat 2 to 3 times. So, all the sand removes from the mint.

Preparation for roasting the peanuts

Take one pan and put in high flame. Then add peanuts and wait for dry roasting. Stir process continue. It takes around 2 to 3 minutes. After, dry roast peel it and put in the grinder.

Preparation for grinding chutney

Take roasting peanut grinder and add all the ingredients. Using ¼ glass of water, grind it. If need more, add more water and your chutney ready to serve.
