Rajasthani food recipe - Besan ka Monthal and besan ke lado

 

Ingredients

500 grams Besan

200 grams Ghee

500 grams Sugar

100-grams Malai

5 to 6 cardamon

Chopped Almonds 7 to 8

Chopped Kaju 7 to 8




Method

Method for preparing Besan for Monthal

First take the Besan and sieve it. Add Malai and mix well. Texture is like a flour which is wet in Malai. After that again sieve and left for 1 hours (Due to rava is made up of Besan).   

Method for foment the Besan

Take deep pan, add 200 gram of ghee and wait until ghee is turn into hot. Add Besan and start to foment. Means continuously stir it until color of the Besan changed into Brown.

Method for making 1 – string sugar syrup

Take deep pan, put on high flame, add 500 grams of sugar with half glass of water. When sugar is contact with flame it melts and convert into syrup. In this process we continue to stir until all sugar is melted. Left them, and notice that sugar is converted into thick form. If yes, close the flame.

How to identify 1 string sugar

Years ago, people use finger tip to see 1 string sugar syrup, put sugar syrup on tip of the thumb and press with near by finger, see is it making the thread like texture. If yes, your sugar syrup ready to use.

Final step of making the Monthal

After that add foment Besan on the 1 string sugar along the powder of cardamon. Now stir properly and mixture is looking like a batter. Leave for 30 minutes for cool. If batter is thick add the warm water and stir it. After 30 minutes add on deep thali, so the pieces cut properly.

For Garnishing

Spread all the dry fruits on the Monthal.

Now your Monthal is ready to serve.

Note: At the time of foment, don’t stop to stir.

Recipe of Besan ke Lado

Ingredients

1 bowl of besan

1 bowl of grated sugar

1 bowl of ghee

2 table spoon of cardamom powder



Preparations

Preparation for roasting the besan

Take one pan, add 1 bowl of ghee and put in high flame. When ghee melted or temperature change, put all the besan and low the flame. Then, start to roast. Roasting process continue until colour goes to golden brown.

How find besan is going to roasted properly?

It left the ghee on the outer boundary of besan and colour is totally changed.

Preparation for adding grated sugar

Now besan completely roasted. Then close the flame and drop the grated sugar and cardamon powder. Mix well until sugar goes in every part of the besan.

Preparation for final step

Using finger and palm take small amount of besan. Prepare balls of Lado. Now after temperature change of lado, it’s ready to serve.

Note: Lado shape prepare in hot besan.
