Ingredients of khaman Dokhla:
1 bowl of Gram flour
1 table spoon crush sugar
¼ tea spoon salt,
½ tea spoon citric acid (lemon juice),
1 table spoon semolina (suji)
¼ tea spoon of turmeric
2 table spoon vegetable oil
1 table spoon Eno
For tadkka:
4 to 5 Curry leaves
1 table spoon Mustard Seeds
½ table spoon Crush Sugar
¼ tea spoon salt
½ table spoon vegetable oil
1 glass of water
Small amount of coriander leaves.
Method:
Take one bowl put besan on it. Add crush sugar, salt, lemon juice, semolina, turmeric, vegetable oil, ENO and mix well. Now add small amount of water and stir with spoon. There is need of 1 bowl of water, put it in small amount. Continue stir it there is no lumps in the batter. Consistency is too thin which make smooth and spongy pieces. After that put on one container which have which have deep density. Grease the density and add all the batter and put in the steamer. After 20 minutes you put one knife and see that is this sticky on it. If not Khaman is ready.
Note: At the time of batter making steamer prepare.
For tadkka:
Take one pan and put on high flame. Add vegetable oil and wait for hot. Now add curry leave, mustard seeds, chilly and water. Wait for boiling. When this mixer come in room temperature add on the Khaman. At the last cut into small pieces, spread coriander leaves and ready to serve.

In Rajasthan there are two ways of Dokhla name Rajasthani Dokhla or daal Dokla and Khaman Dokla. When prepare Rajasthani Dokhla it made using wheat flour. Ingredients of daal Dokhla
1 cup of wheat flour
1 tea spoon on Meetha Soda
1 table spoon of ajwain
1 table spoon vegetable oil (for moin)
1 ping of Hing
Dry spices
1 table spoon of red chilli powder
Salt according to taste
½ table spoon of Gram Masala
Preparations
Preparation for making dough
Take deep plate, add flour and all ingredients. Mix well. Then make hole in the middle on the flour and put oil. Mix well until all ingredients reach at every point. Using small-small amount of water prepare dough like a chapati. It takes around 6 to 7 minutes in preparation.
Preparation for making dough dokhla
Divide the dough into small-small parts like chapati balls. Use this ball make doughnut style shape and put on plate. Same process follows for all balls.
Note: Shapes are depending on all you. If know any shape converted.
Preparation for steaming
When Kadhi or dal is cooked on slow – medium. Put all the doughnut style dokhla in this soup. When drop immediately situated on the bottom of the pan. When raw texture goes into proper cooking, it come to the upper layer on the soup. This stage said to be I am ready to eat. It takes around 20 minutes to prepare properly.
These dokhla eat along this soup. Some people prepare using daal and called as daal dhokla.
